It’s our favourite time in the valley! As the crisp autumn air settles over Chilliwack, there's no better time to gather your loved ones around the table for a hearty, homemade meal. Cooking with fresh, local ingredients not only supports our community's farmers but also provides our families with the most nutritious and flavorful dishes possible.

Here in the Fraser Valley, we're blessed with an abundance of fall produce, perfect for creating comforting meals that warm both body and soul. By choosing seasonal ingredients, we're not only reducing our carbon footprint but also teaching our children the importance of connecting with nature and what our land produces.

While the Okanagan is known for being the largest producer of BC’s apples, Chilliwack also harvests an abundance of apples this time of year, and those are the ones I use to bake delicious apple pies throughout the season

Chilliwack's Best Fall Apple Pie

**Ingredients:**

- 6 cups thinly sliced local apples

- 1 cup sugar

- 2 tablespoons all-purpose flour

- 1 teaspoon ground cinnamon

- 1/4 teaspoon ground nutmeg

- 2 tablespoons local butter

- Pastry for two-crust 9-inch pie

**Method:**

1. Preheat oven to 400°F (200°C).

2. In a large bowl, mix sliced apples with sugar, flour, cinnamon, and nutmeg[7].

3. Line a 9-inch pie plate with pastry. Fill with apple mixture and dot with butter[7].

4. Cover with top crust, seal edges, and cut slits for steam to escape[7].

5. Bake for 50 minutes or until crust is golden brown and filling is bubbly[7].

As you savour each bite of this homemade pie, remember that you're not just feeding your family – you're nourishing their bodies and souls, creating traditions, and strengthening bonds that will last a lifetime - what’s more Canadian than apple pie?! So gather your loved ones, roll up your sleeves, and let's make some delicious memories together!

Mark your calendars for the 152nd annual Chilliwack Fair, set to take place from August 9th to 11th, 2024, at the historic Chilliwack Heritage Park. This year’s theme, “BARN TO BE WILD,” promises an exciting and wild ride for attendees of all ages.

Located right off the Trans-Canada at exit 116, the Chilliwack Fair is the second oldest continuously running fair in British Columbia. This event is a testament to the community’s rich culture and heritage, bringing together individuals from diverse backgrounds to celebrate the best of what Chilliwack has to offer.

The fair is more than just an agricultural event; it’s a vibrant celebration of local talent, entertainment, and community spirit. Here, you can indulge in delicious food from various vendors, enjoy face painting, pony rides, and explore the marketplace filled with unique goods. The outdoor concert area will be open until 11 PM, ensuring the fun extends well into the night.

Highlights of the fair include the Rough Stock event on Friday night, featuring thrilling bull riding, bareback, and saddle bronc competitions, as well as the BCRA Rodeo. Animal enthusiasts will love the 4-H and farm animal exhibits, while families can enjoy the Vancouver Circus School, CampH FMX bike flipping, Laser Tag, Foam Party, and a ninja parkour course.

The fair also showcases local artists on the kitchen stage, offers a photo booth, and features inflatable games for kids. With its diverse range of activities, the Chilliwack Fair is an event that truly has something for everyone.

This volunteer-run event owes its success to the dedication of its volunteers, sponsors, and community partners. As Past President Cathy Oss aptly puts it, “Our success over the years is due to our volunteers, our sponsors, and our community partners, all of whom give generously so that our community will benefit.”

It’s finally GREEN season! After months of brown vegetation, the snow and rain of the past few months has dissipated, and now it’s time for spring greens to spring forth!

With our Fraser Valley ready to burst into colour, we thought we’d explore the best of Chilliwack, celebrating the season with the seasonal superstars - asparagus, broccoli, and cabbage! We’ve put together this delicious salad that embodies the essence of spring. Enjoy!

Ingredients:

  • 1 pound fresh asparagus, trimmed
  • 2 cups broccoli florets
  • 1 small head of cabbage, thinly sliced
  • 1/2 cup chopped fresh parsley
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup chopped walnuts or almonds
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Fresh lemon wedges for serving

Instructions:

  1. Prep the Vegetables:
    • Blanch the asparagus in boiling water for about 3-4 minutes until slightly tender. Immediately plunge into an ice bath to stop the cooking process. Once cooled, slice into 1-inch pieces.
    • Steam the broccoli florets until they are tender but still crisp. Let them cool.
    • In a large bowl, combine the cooled asparagus, steamed broccoli, and thinly sliced cabbage.
  2. Add Fresh Herbs and Nuts:
    • Sprinkle the chopped parsley over the vegetables and toss gently.
    • Add the crumbled feta cheese if using, and mix well.
    • Top with chopped nuts for a crunchy texture.
  3. Dress the Salad:
    • In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper until well combined.
    • Pour the dressing over the salad and toss to coat evenly.
  4. Serve:
    • Serve the salad immediately, garnished with fresh lemon wedges on the side. The acidity of the lemon will enhance the flavors of the vegetables

Tips and Variations:

  • For an extra burst of flavour, add some sliced red onions or diced bell peppers to the mix.
  • If you prefer a lighter dressing, you can reduce the amount of olive oil or substitute it with avocado oil.
  • This salad is perfect as a side dish or can be made more substantial by adding some grilled chicken or tofu.

While snow might cause chaos for those who can’t (and shouldn’t!) drive in the winter, it offers a whole range of outdoor activities for those of us who can deal with the terrain - and the tires! For retirees looking to explore everything the Valley has to offer while engaging in fun, healthy activities, Chilliwack offers a plethora of exciting options.

Eagle Watching

Each winter, approximately 35,000 Bald Eagles migrate to the Fraser Valley, making it a paradise for bird enthusiasts. These majestic birds, with their impressive wingspans, can be spotted along the Vedder Rotary Loop Trail and Prest Road. To ensure a respectful and enjoyable experience, remember to stay in or near your vehicle, avoid loud noises, and use binoculars or a spotting scope to observe these creatures without disturbing them. This activity is a great way to connect with nature and appreciate the beauty of these protected birds.

Snowshoeing

Snowshoeing is an excellent winter sport that offers a low-impact, enjoyable way to explore the outdoors. It requires minimal technical expertise, making it perfect for retirees. Popular spots in the Chilliwack area include Elk Mountain and Chilliwack Lake, where you can trek through snowy landscapes, enjoy the tranquility, and capture breathtaking views. If you don’t own snowshoes, you can easily rent a pair from local outfitters like Mt. Waddington’s Outdoors. Pack a picnic, bring a camera, and you’re set for a delightful day out.

Winter Fishing

For those who enjoy fishing, winter in Chilliwack offers several exciting opportunities - yes, really! The Chilliwack (Vedder) River is renowned for its Steelhead fishing, while the Fraser River backwaters are home to Coastal Cutthroat Trout and White Sturgeon. If lake fishing is more to your liking, Rainbow Trout are available, although the catch rate may be slower in the cold season. Check out the local guides who can give lessons and share their expertise to ensure you get the best experience possible.

Cross-Country Skiing

While not exclusively in Chilliwack, the nearby Manning Park Resort is a must-visit for cross-country skiing enthusiasts. With 64 kilometers of pristine trails, this Nordic center offers a serene and invigorating way to experience the Canadian winter. The trails cater to all skill levels, and the scenic beauty of the Cascade Mountains makes for a truly unforgettable experience.

Relaxation at Harrison Hot Springs

After a day of outdoor adventures, unwind and rejuvenate at the indoor public mineral pool at Harrison Hot Springs. Maintained at a warm 38 degrees Celsius, these healing waters are perfect for soothing muscles and enjoying some well-deserved relaxation. This is an ideal way to cap off your winter activities without braving the cold.

Chilliwack’s winter landscape is a treasure trove of activities that cater to retirees looking to stay active, connect with nature, and enjoy the company of friends and family. Whether you're an avid bird watcher, a snowshoeing enthusiast, or simply looking to relax in natural hot springs, Chilliwack has something special to offer this winter season.
